We weren’t quite sure how to finish off this wall in the garage/barn thingy.  Using drywall seemed way too fussy.  And plywood just wouldn’t have looked “right.”

John suggested simple pine v-board, smooth side out.  And it looks awesome.  We’ll have a big rolling barn door that’ll cover the opening.
